If the word fermented makes you think of fine wine or silky brews, you are sadly mistaken. The fermented nutrients that we are talking about are foods that have been fermented to enable easy digestion and quick absorption by the body cells. In fact, fermentation is an integral part of the process of digestion where the micro-organisms present in the digestive tract break down the food into easily absorbed forms. According to some estimates a healthy digestive system has more microorganisms present in the gut than total cells in the body.
Since ages, fermented dairy products, such as cheese and yogurt has been part of our daily diet. These foods are easy to digest and high in terms of nutrient value. Some of the regular condiments that we see in almost every kitchen such as mayonnaise, mustard and ketchup also contain fermented ingredients. Most of these foods are fermented by the use of probiotic bacteria or yeast.
